Sandra's Lasagna

Food is a sub-character in all the Visions of Murder books since feeding is Sandra's love language. In at least one or two scenes per book, Bekka will arrive home from work starving and is met with a home-cooked meal. Here's a favorite recipe: her mother's lasagna.

INGREDIENTS:

1 lb. lean ground beef

Two 8 oz. bags shredded mozzarella (Kraft is best)

Package of American Beauty or desired lasagna noodles

1 jar of Newman's Sockarooni spaghetti sauce

Grated red pepper flakes

DIRECTIONS

Brown the beef in a skillet, draining excess grease

Pour full jar of Newman's Sockarooni sauce into skillet, mix with beef and stir frequently. Add pepper flakes to taste.

Bring large saucepan of water to boil, insert 9 lasagna noodles

When noodles are fully cooked (but not too soft), drain the saucepan water, place noodles in colander

Using a 9 x 12 casserole dish, start layering the beef sauce, noodles and cheese. (There will be three completed levels of noodles/sauce/cheese when finished. Be sure to leave enough cheese for the top. It's easy to run out of beef sauce unless you watch the amount used between layers)

Cover the completed dish with foil and bake at 400 for 30 minutes. After that time, remove the foil and bake another 15 minutes letting the top layer of cheese get golden brown.

Remove and serve. Feeds 3-4 people.
